Our salad mix is a mix of baby lettuce greens from True Leaf Market (which means they are Non-GMO, heirloom seeds, but the variety of lettuce in the mix can vary slightly).  Occassionally we add microgreens to the mix (mild varities like broccoli, cabbage, kale, etc...).
